Backup copy of everything?
 
I don't particularly want to go through the entire process of creating a server again.. It was tough enough the first time. Can I just copy the folders EqEmuServer, Installs, Source, SQL and put them on my external HDD? In case I have to format or upgrade my OS, etc..? Will that work or do I have to go through the process again step by step..

Basically, yes, although really all you need is the EQEmuServer and a backup of your database. The wiki has a page about doing that.

Actually, after the first time installing is pretty easy. A few weeks ago I had never installed a server, and I volunteered to update the wiki as the old guide was confusingly out of date. This is also why it gets updated whenever anyone such as yourself has an issue.
