There is not just a single server. The emulator is robust enough that there are themes to servers, example: Project 1999 emulate everquest with the first two expansions. Project EQ emulates live EQ. And there is a plethora of custom content servers offering a unique experience unlike live or classic.

They all are in one centralized place, the loginserver. You login to there, and it automatically detects which client you are using. Depending on what the server configured, you will have access to zones. The EQ Client in this way becomes a viewer instead of a hardcoded client like the WoW Emulators do.

Hopefully that clears up some of your concerns.
