You can open multiple instances of EQ from one install folder and you should not see any instability as long as you are running windowed mode and using a different login account for each window.
What most people do who play on servers like EZ that allows unlimited characters, is to have 1 main install with full resolution, etc and then a separate install for bots where everything is stripped down to improve performance (resolution, UI, ini mods, etc).
