Walking pathes are stored in the database, not in the map files.
Unless i m wrong, map files only contains an architecture of the zone that is needed by zone.exe to know where and what are the buildings, what's the ground shape...

Moving npcs are coded into the database, you can add them from the client, there's an excellent guide in the eqemu guildebook 1.3, see tutorials forum.
