Default Titanium V SoF

I've had a look over the Wiki, SoF Dev tracking and the forum FAQs but didn't see this particular question answered. What exactly is the benefit of running a SoF-enabled server over Titanium, aside from Drakkin and new zones? Looking over the information on SoF I get the impression that Titanium is much more stable - is this a fair estimation? If I were to begin work on my own custom server would I be wise to stay with Titanium or go ahead with SoF?

Yes T is more tested and stabled, and SoF has new models and zones, but SoF slowly getting there too.
The current server code equally support both as far as connection goes.
What you need to decide for yourself, is which zones you plan to use. If you want to use exclusively SoF zones- then T users simply won't be able to go there on your server, and majority of Emu users still using T.
The SoF users on other hand have access to anything T users have access to, with exception of old HighPass zone.
