How to change expansion data?

Trying to get to a new expansion, stuck on Dragons of Norrah without any idea how to change it!

You can change the expansion rule value to a higher expansion, however with that said, none of the content above dragons is curated and the encounters and quests will not function.

So, wait, how do all these other server I see around have further then that? Is there not anything I can do?

The physical zones will work, if any of the entities have been added they are most likely not accurate, tuned and no real quests have been added outside of anything custom those owners are adding.
