Yes, you can set up and join guilds.

Taken from the eqemu readme:

#guild guild commands (type help for more info)
#guild help

And I've never had an issue with crashing when zoning from one map to another. Doesnt have anything to do with zones being more complete or not. Might check you data rate and make sure its set appropriately for your type of connection (lower for dialup, higher for cable/high speed internet)
